I agree with staying in the brighter color palate....oranges, reds, neons (warm colors) > blues, purples (cool colors)....especially with silver.
You could play with the color palate on Forza or Gran Turismo. Powdercoating is cheap, beautiful racecars are priceless.

it was kind of obvious you would'nt keep them with the cage
Go with something neutral like matte black for the interior and a bright colored cage (you should inspire yourself from a brand) kinda like ryanroland suggested
Honestly i really love how your Fit is coming along... i just wish i could afford to dedicate mine to track too... maybe in a few years! +rep

I'm from Texas so safety precautions don't apply to us bosses.

On a serious note: I have indeed read everything about safety with a cage. I will honestly say yes I will be dailying it for a bit until I purchase a DD here soon. Once you put aftermarket seats in our cars, you will notice it is very low. i even have super low rails so my legs are slightly bent in driving position. the way the cage is being made will in no way be around my head. it will be welded to the chassis. like no gap at all. It will also, just for good measure, be wrapped in the appropriate foam protection. the closest bar will be my A pillar which is raw metal anyways, so if you didn't have a cage and hit your A piller, the results would be the same. but like i said, its super far away and yes I will be 6 pointed down to the seat.
I'm sure there is someone out there that will post "OMG I HAVE NOTHING BETTER TO DO THAN BE A HATER AND HARD POST HOW STUPID YOU ARE FOR DOING THIS ETC.. (INSERT ALL MY TROLL KNOWLEDGE OF ROLL CAGE SAFETY HERE)"
On a side note: i have access to a trailer and truck if one of my friends aren't trailering. i don't mind driving. most tracks are about 2 hours max from where I live.
