The Colorado trip: 3299.7 miles, 45.09 mpg
I just finished a two-week road trip to hike, backpack, and climb 14,000 foot plus peaks in Colorado from Nashville. Total miles = 3299.7 for 73.174 gallons of gas. Overall average mpg = 45.09! I was hoping to break 45 and I did, by a hair. Best three partial tanks in the mountains were 49.1, 50.8, and 50.9 mpg. No special techniques were used, just moderate speeds: 60 mph on the limited interstate miles (I wanted to take the back roads), 55-60 mph on the two lanes through Kansas and Missouri, and 45-50 mph in the mountains. It was just me and about 200 pounds of gear. Tire pressure 44 psi. Total gas cost was $271.53 for an average of 8.2 cents/mile. I have a base manual transmission and I started the trip with just over 600 miles on the odometer, having got the thing less than a month before the start of the trip, so it was still on the early break-in stages. No AC use throughout the two week trip. And it is Milano Red, which is good for an additional 5 mpg at least! I ended up sleeping in the Fit four nights and even being 6"2" I found it to be quite comfortable. I even took it over some fairly rough and muddy gravel/dirt roads without ill effect and I didn't get stuck in the mud. The Fit turned out to be a great little road car. Take that hybrid folks!

I am from Colorado- Glad you enjoyed our state.
Those are some impressive mpg numbers, especially driving at high altitude in the mountains.
Taking the backroads and keeping to 60 mph was brilliant!
On my cross country trip last summer, I did mostly interstates 70-80 mph. I also had a trailer hitch, 30 lb bike rack and 30 lb mountain bike on the rear, used lite a/c when needed.
I still averaged mid-high 30's with an AT. My daughter and her husband have a Civic hybrid--the Fit's mpg comes very close to it.
