Shows How much I know about stereos...
Soo I went to the local stereo shop and the guy quoted me 400 for 2 12's and a 800 wat amp. Would that bump? And does that sound right about the price? I would include 2 12 inch kickers, No specified amp case and install.

I'm no ice expert either, but I don't think you need 2 12's. 1 12" or 1 10" with a nice amp would sound good. I think you can find a decent setup for around $200-300. $100 for a nice sub (I'd get like a Alpine Type-S or Type-R), amp of your choice and a nice box.

with a properly designed enclosure, quality sub and clean power.... a single sub can play very loud in a hatch/wagon
a single 8" can be VERY loud. i have done it. but, i don't even bother with subs any more. i bought a Fit for the cargo capacity, i refuse to lose half/all of the hatch with a sub.
if you properly dampen and seal a quality set of 6.5" components (hell, even coaxials) in the door with (as always) clean power, you will get excellent bass response.
