Defi water temp warning!!!

Defi water temp warning!!!

Hi guys,

Just installed Defi gauges yesterday. Would like to check with you all what are the normal operating temperatures?
Cruising -->???
Idling -->???
Hard revving -->???
The water temp actually reached 100degree celsius once momentarily yesterday. Is this normal?
I'm wondering could it be because of the coolant? Cos when the mechanic installed the water adaptor alot of water poured out and he only topped up with plain water. I asked whether he should be adding coolant mixed with water he said not neccessary and just topped up with water. Is this right?

What is the normal operating temperature for oil?
What should the warning be set at for water temp, oil temp and oil pressure?

This is really starting to bother me.

The previous owner had done something to the thermostat/fan switch such that the fan is running all the time. If it's running all the time the temp should be kept low but it actually reached 100C yesterday briefly... Something is wrong somewhere but where?

The oil pressure warning was also set to 10 by the installer. I noticed when my car is idling the needle does drop to 18. What should be checked here?

The fan shouldn't work all the time, it's wrong.
My oil temp normal temp is like 100c and if I drive hard will go up to 110c and when I slow down it will go to 100c but that takes some time. As for my water temp mostly is in 80c and in hard driving will reach 90c and goes back fast to 80c. You should check your radiator if it's blocked.

Drove around quite abit today with some errands and made some observations.

Today the water temp is usually at 90, highest to 94-95.

My oil was highest at 90.
