I know other things in the car switch the ground instead of the power - might be same for this.

In otherwords, the 12v line is always connected to the rear-defroster, but the ground wire is connected/disconnected to complete the circuit.

Hard to say, since I'm not sure what the defroster switch looks like. I assume you have it something like this:

Defroster/Switch 12V ======== +LED- ========= GND

... but that 12V on/near the switch isn't what's being on/off by the switch... try this:

Defroster/Switch GND ========= -LED+ ======== 12V

In other words... it sounds like you've got your +12v connected to the right thing. You just need to move your LED's ground-wire to the switched-ground controlled by the switch.

A multimeter would help to figure out what the switch is changing. You need to 'ohm-it-out'. Put the DMM in the mode that beeps when you touch the leads. Put one end to ground, and then the other to various pins on the switch. When you find the right one, the "switched-ground", it will beep/stop-beeping when you toggle the switch.
