Is there a company that has developed a CNC program for the heads? Port and polish can be disastrous if done incorrectly.

You could end up cutting into a water passage, making the port too big to be effective, create a flow pattern that does not work, create differences between the cylinders thus negating any gains, etc.

CNC'd heads are consistent between cylinders and usually, have a lot of engineering behind the program. Port shape, volume, and flow patterns are taken into account during the programming.

QFT! But as for polishing, I don't think too many ill effects will happen from port patching as well as removing flashing and smoothing out the surface. I don't think you'll see HUGE gains though, I feel you'll need better cams for that, but that is a whole other can-o-worms.

Yeah, as long as everything is done in moderation (sounds like a diet, eh?) I've seen many horrors done on heads in the past and would prefer a tried and true system.

If you're just polishing and not removing too much material, then a small increase in CAM specs might help. If you hog out the port, then you may need a bigger CAM to make it useful, but then again, you're going to have to spin some RPMs to make it work. It's a small pump anyway.
