Snow tire size.

I have an option to acquire some gently used snow tires. They are 205/55/r16. Will they fit? Stock is 185/55/r16 so I'm assuming they will be a little taller...

As long as you are going for all 4, I'd try it. The diameter is almost an inch taller. I'm assuming your Fit is stock.
