That explains your rubbing issue!
Basically you are running a et15. With just the 40 offset you are pushing the face of your wheel (and subsequently your tire) out 28mm more than factory.
Add your 25mm spacer and that number jumps to 53mm more. Thats just way too much. my 8 et35s are perfectly flush with the fender, and running 205/40-17's allows the tire to tuck inside the fender lip under hard cornering. btw thats 45mm farther out than factory.
So you are AT LEAST 8mm too far out with your current spacer setup.
And some pics of mine:

2010 Honda Fit Sport - Eibach Pro-kit - GE8
I put about 90 highway miles and 10 side-street miles on the car every day. So when I was looking for springs, I wanted the highway-portion of the ride to be fairly compliant, but also wanted a better [more firm] feel for the curvy-portion.... and of course less wheel-gap without looking slammed.
I decided on Eibach Pro-Kit springs, and am so happy to find that they deliver exactly that! On the highway and in general straight-line driving, you might be able to tell a difference from stock if you really concentrate... but it is a very slight difference. But when you load up in a curve, and under hard braking, you definitely notice the difference right away!
The main downside of it is that I'm suddenly very aware of the stock performance delivered by the stock tires... need to do something about that eventually.
As far as the wheel-fitment goes... personally, I think it's the perfect height. I wouldn't want it any lower. I'd like to see the rear wheels 'out' a bit to be a little more flush, but whatever... maybe once I save up some more dough for 7" wheels/rubber.

yup i was able to get it stable enough to drive around in and not have it come off, but theres still some kinks i need to work out before i put it out to the rest of the community.

they're 16's. 4x100 are pretty hard to come by nowadays. these are my 3rd set and i'm probably not gonna let them go. i have a friend who has some in 4x114 if you're down to run a 25mm 4x100/4x114 adaptor. haha

basically the only pros in running a 25mm adaptor is that you have a more broad selection of wheels to choose from. and 4x114 wheels dont sell for as much as 4x100's do. idk why, thats just how it is.
bad thing about running a spacer is you're automatically going to have an extra inch of poke. so if you have a 17x7 +35 wheel, with the spacer it'll end up being a 17x8 +35. meaning chances are you're going to have to do some fender work.
heres my car with 25mm spacers. original wheel specs were 16x7/8 +32, with the adaptors on it put it at 16x8/9 +32. 24k gold dipped Volk GTU's.

I like your height... if I lower it can't go much lower (if any) than that. Seems like a nice height and it's looks pretty balanced (front space between tire and wheel well/rear space between... )
A friend had his ride lowered. In photos it looked as if the rear springs lowered more than the front... and lots of Fits look that way after lowering. When I saw it in person, I realized it was an optical illusion, somewhat. Because the rear wheels are buried further back into the wheel wells than the fronts, the shadows above the rear wheels make the stance appear as if it's lower than the front.
Anyway, looks good.

not exactly. with the ge's, they're made with a solid rear axle. the rear will not have any natural camber after lowering it so the wheels wont tuck as easy as being said. if anything the front will clear more than the rear.
