2009 - 2012 vs. 2013
OK, So the main difference that I have noticed is with the front bumper and grill between the 2012 and the 2013. I see a lot of parts online that say they are for 2009 - 2012, or 2009 - 2013. Are the sites just not updated? Are the parts for the 2013 fit just not out yet?
My question is though, what fits? and what doesn't?
I just got my 2013 Honda Fit from the dealership with only 15 miles on it, and I can't wait to start moding it up! Of course as of right now everything I can without voiding the warranty. I am new here, and to the JDM community. I drove a 2000 Honda Accord LX for about 6 years, and a '96 Dodge Avenger before that.
Anyways, to all the 2013 owners out there, what works with the 2013 fit? I dont want to spend $300 on something, only to find out that it wont fit on my fit.

Part numbers sometimes change when the refresh occurs even if the part is the same. And the sites are designed more to enable correct repair ordering; if you are repairing a customer's 2011 door you don't want to get the 2013 door garnish.
I doubt I can give you a comprehensive list of differences, but here's the big ones. As you pointed out, the bumper and grille are different. The wheels and tires. Some interior finishings were made a bit more plush. I think the suspension is identical although some people have speculated the shocks are slightly softer after the refresh.
But in general, what I CAN tell you is, all the mounting points for various parts are identical. So as an example, if you bought a 2013 bumper it would swap onto a 2011 car. Therefore if a part is listed to fit on the pre-fresh cars it will fit on the post-refresh and vice versa.
I couldn't think of any exceptions to that -- but there might be some -- anyone else?

There's no guaruntee that anything will work until someone has tried it but if you think about it this way, you should be fairly safe:
If it is cosmetic in nature (bumper covers, etc...) It may not work without multiple pieces being ordered (such as a 2012 bumper cover would need 2012 or earlier Fogs, Grille Insert, maybe different headlights, etc...) if you bought all of that, you could install the cover (and the rest of those components)
If it is mechanical in nature (shifter, Seats, etc...) it should fit without any issues as the MMC (Minor Model change)/refresh is almost always largely cosmetic to give a fresher look.

I understand that there are no differences between the 2012 and 2013 Fit's aside from one or two color options. Any accessories and such that fit a 2012 should work on a 2013. The grille/bumper differences you've seen may be Sport vs. Base model differences.

It has been an awesome car so far! I just need to double check what I can do to the fit, without voiding the warranty. I bought the extended 7 year warranty, and I am almost regretting it. Might have to see what I can do to go back to just the tree year.

You really need to read up on Magnusson-Moss so you never again say the phrase "void my warranty". It's like saying someone "gives 110%". NO they do not. 100% is all there is. You can't have or give more than all. You CAN NOT void your warranty. That's against the law under Magnusson-Moss. It is possible for one small part of your warranty to be voided on one single system or component of your car if it can be proven that either you modified it in a way that caused a failure or you ignored proper maintenance procedures and timetables and allowed it to go unmaintained causing a failure. They can not deny warranty on your air conditioner because you changed sway bars or they can't deny warranty on your rear window wiper because you changed your air intake. IOW they CAN NOT "void your warranty".

Ok, no offense kaptivesmoke but your photo is so gigantic it stretches the window and makes the text of all the posts spill out the sides. Any way you can maybe crop out the far left trees so it's no wider than the screen?
